Ingredients

1 teaspoonGarlic; chopped
1 eachSerrano chiles; chopped
3 tablespoonsSugar
3 tablespoonsFresh Ginger; minced
1/4 cupFish sauce
2 tablespoonsLime Juice; freshly squeezed
3 tablespoonsWater

Method

StepInstruction
1Put garlic, chilies, sugar and ginger in a mortar and pound into a paste.
2 Transfer to a small bowl and add fish sauce, lime juice and water. Stir
3 well to combine. Set aside for 15 minutes before serving.
4 Keeps several weeks in the fridge, but you lose the sharpness of the
5 ginger overnight.
