Ingredients

1 2/3 cupsUnbleached flour
1 1/4 teaspoonsBaking soda
1 1/2 teaspoonsGinger
3/4 teaspoonCinnamon
3/4 teaspoonSalt
1 largeEgg; lightly beaten
1/2 cupSugar
1/2 cupMolasses
1/2 cupBoiling water
1/2 cupVegetable oil
2/3 cupConfectioners Sugar
3 tblspoonsFresh lemon juice

Method

StepInstruction
1Preheat oven to 350 degrees.
2 Grease and flour a 9" square baking pan.
3 Sift dry ingredients together.
4 Add egg, sugar, molasses and mix well.
5 Pour boiling water and oil over mixture and fold together.
6 Pour into prepared pan.
7 Bake on middle rack of oven for 35-40 minutes.
8 While baking, prepare lemon glaze: Mix together confectioner''s sugar and fresh lemon juice.
9 While still warm, poke holes in cake with skewer. Pour lemon glaze over cake.
