Ingredients

3Potatoes; peeled, sliced
2 quartsCanola Oil
Seasoned salt; to taste
Freshly ground pepper; to taste

Method

StepInstruction
1Always wash vegetables before preparing.
2 Preheat canola oil in a stock pot or fryer to 325 (F) using a candy/fryer thermometer.
3 Peel the middle of the potatoes leaving the skin on both ends.
4 Cut potatoes in 1/4 inch to 1/3 inch slices and then cut into sticks.
5 Place cut fries into cold water to help remove excess starch and keep them from oxidizing while you prep.
6 Remove fries from water and pat dry to remove excess water.
7 Place fries in hot oil and par cook for approximately 5 minutes or until light brown.
8 Remove fries and lightly shake off excess oil and place on cooling rack to dry.
9 Raise heat of oil to 350 (F)
10 Cook fries again, until golden brown, about 2 minutes.
11 Remove from oil, shake off excess oil.
12 Season with seasoned salt and ground pepper to taste. Serve.
