Almond And Tomato Bites

Ingredients

4 ounceAlmonds; ground or coarsely crushed
6 ounceWholemeal breadcrumbs
1 mdOnion; finely chopped
1 sm clovegarlic; finely chopped
parsley; Freshly chopped, to taste
8 ounceTomatoes; skinned
Salt and freshly milled pepper; to taste
2 tablespoonVegetable oil

Method

11. saute the onion and the garlic in the oil in a pan until softened. 2. Add the tomatoes and cook for another 5 minutes. 3. Pour the mixture into a bowl and add the almonds and breadcrumbs. 4. Mix well. Season to taste with salt and black pepper. 5. Form the mixture into small, bite-size balls. Arrange on serving plate and cover them with masses of chopped parsley. NOTES : These savoury nut balls are very quick to prepare.
