An African Vegetarian Stew

1 teaspoonGround coriander
4 smKohlrabies; or parsnips
2Zucchini; sliced thick
1/4 teaspoonGround cumin
1/2 teaspoonGround cinnamon
1/2 teaspoonGround ginger
3 cupWater
1/4 cupRaisins; dark or golden
2habaneros; Chopped, or to taste
1/2 cupCouscous; or- Bulgar Wheat
1 lgOnion; chopped
2Sweet Potatoes; peeled
5Tomatoes; fresh; OR 16 0z can
1/2 teaspoonGround turmeric
1 15-oz canGarbanzo beans


1Combine all the ingredients in a large saucepan. Bring to a boil, lower the heat, and simmer until the vegetables are tender, about 30 minutes. Note: Serve the couscous separately, if desired.
