4 cupsCabbage; preferably napa, shredded
1 cupApple; sliced into julienne
1 mediumCarrot; shredded
1 cupsnow pea pod, fresh; blanched and sliced into julienne
1/4 cupApple juice
1/8 cupSalad oil
1/8 cupChampagne wine vinegar
1/2lemon; juiced
salt & pepper; to taste


1Shred vegetables and gently mix together.
2 Combine remaining ingredients for the dressing in a blender and mix until thickened.
3 Toss dressing with vegetables and serve.
