Artichoke Pie by Rose Ruisi Esposito

Ingredients

2 packagesArtichoke hearts; thawed
5 clovesGarlic; chopped
4 tablespoonsVegetable oil
6EGGS
1/2 poundMozzarella; cubed
1/4 cupParmesan cheese
salt and pepper; to taste

Method

StepInstruction
1* Saute' artichokes and garlic in oil until lightly browned, cool.
2 * Beat eggs, add mozzarella cheese, parmesan cheese, salt and pepper, mix well.
3 * Add artichoke mixture, blend well.
4 * Pour into an unbaked pie shell.
5 * Cover with pie crust, cut slits in top.
6 * Bake 45 minutes to one hour in a 350 degree oven.
7 * Top can be brushed before baking with egg yolk beaten with a tablespoon of milk.
