Aubergines with tomato

250 mlVegetable oil
2 tablespoononion; chopped
1 tablespoonGinger; minced
2 teaspoongarlic; minced
500 mlTomato puree
1 teaspoonchilli powder
2 teaspoonground coriander
1/2 teaspoonground tumeric
1 teaspoonsalt
8small round aubergines; quartered
2 tablespooncoriander leaves; chopped


11 Heat the oil in a kadhai or wok and fry the onion over a medium heat until translucent. Add the ginger and garlic and cook until softened and starting to colour. Stir in the tomato purée, ground spices and salt, then bring to simmering point.
2 2 Add the aubergines, spooning over the sauce to coat. Cover and simmer for 15 minutes until soft. Stir in the fresh coriander.
