Baked Cod and Coconut Curry

2 lbscod fillets; partially thawed
2 bagsfrozen organic butternut squash from Whole Foods; cubed
1 canorganic coconut milk
1 largeyellow organic onion; chopped
4 clovesfresh organic garlic; minced
1 teaspooncinnamon; or more
1 1/2 teaspoonyellow curry powder; or more
1/2 cupraw pine nuts; or more
1/2 teaspoonsalt; or more
1/4 teaspooncoarse ground pepper; or more
4 tbsolive oil

Method

StepInstruction
1Line a 9 x 12 pan with tinfoil. Add a little olive oil to the pan. Place the partially thawed cod fillets in pan and surround with the frozen cubed butternut squash. Add salt and pepper; set aside.
2 Saute the chopped onion and minced garlic in a little olive oil. When onions are soft add the cinnamon and curry powder; then mix in the coconut milk. Pour the mixture on top of the cod and squash. Add the pine nuts.
3 Bake in preheated 375 degree oven for around 40 minutes.
