Blue Blueberry Muffins

Ingredients

Muffin Mix
3/4 cupbutter; melted
1 cupsugar
2 largeEggs; beaten
2 teaspoonbaking powder
1/2 teaspoonsalt
1 cupblueberries; fresh or frozen
1/2 cupblueberry pie filling
2 cupsflour
1 tablespoonflour
1/2 cupmilk
Crumb Topping
1/2 cupsugar
1/3 cupflour
1/4 cupbutter; softened

Method

StepInstruction
1Preheat oven to 375 degrees. Grease muffin pans or line cups with liners.
2 Melt butter and mix in sugar. Add beaten eggs, baking powder and salt. Mix thoroughly.
3 Put one tablespoon flour in plastic bag with blueberries. Shake gently to coat blueberries. Add flour and milk and mix thoroughly.
4 Add blueberry pie filling. When dough is mixed, fold in the blueberries. Fill muffin tins 3/4 full. Put extra in a miniature muffin pan.
5 Topping - Mix sugar and flour and cut in butter. Sprinkle over muffins and bake 35-30 minutes.
6 (Put extra filling in 1/2 cup portions in paper cups to freeze)
7 Cool at least 30 minutes before removing.
