Bombay Potatoes

2 poundsPotato; Baking potatoes are good.
1 largeOnion; Peeled and sliced
1 largeTomato; Beef tomatoes are good. Sliced
2 clovesGarlic; Finely chopped
1 tablespoonOil; Peanut oil
1 teaspoonTumeric
1/2 teaspoonCumin
1 1/2 teaspoonGara masala
1 handfullCoriander


1Peel the Potatoes, cut into large pieces and parboil them in a large non-stick saucepan with the Tumeric.
2Drain the potatoes and put into a large bowl. You may cover them with cling film at this stage, and let them cool off, if you wish to continue the recipe later.
3Put the tablespoon of Oil into the saucepan and add the Onions. Fry the onions until they soften and become translucent.
4Add the Garlic and also allow to soften.
5Add the parboiled potatoes back to the saucepan as well as the Cumin, Gara Masala, and Tomatoes.
6Warm the potatoes through (if you've previously set them aside) and cook until the potatoes are cooked all the way through, and the tomatoes are soft and falling apart. Mix the ingredients together, but don't over do it as the potatoes will break up too much.
7Empty the contents of the pan into a serving dish and use the Coriander to garnish.
