Braised Kale

1 tablespoonOlive oil
2 cupsOnion; Thinly sliced
1 teaspoonSalt
12 turnsBlack pepper; Freshly ground
1/2 teaspoonRed pepper flakes
2 tablespoonsGarlic; Minced
2 cupsChicken Stock
8 cupsKale; firmly packed, torn and stemmed
1 splashCider Vinegar


1Heat the oil in a large skillet over high heat.
2 Add the onions, salt, pepper, and red pepper flakes and stir-fry for 2 minutes.
3 Add the garlic, kale, and stock and cook, stirring occasionally, for 8 to 10 minutes;
4 add a splash of cider vinegar in the last minute of cooking.
5 Remove from the heat. Serve immediately.
