you can substitute apples for the currants if desired

|1 cup||wheat berries|
|3 tbs||sherry vinegar|
|3 tbs||dried currants|
|3/4 lb||brussels sprouts|
|Salt and pepper to taste|
|1||1. Bring 1 1/2 qts water, wheat berries, and salt to boil in medium covered saucepan. Reduce heat and simmer till berries are tender but not mushy (some should start to burst), about 1 1/4 hours.|
|2||2. Whisk salt, pepper, oil, 3 tbs vinegar, paprika and currants together in bowl. Let stand while wheat berries cook.|
|3||3. Cut sprouts into fine shreds (use food processor with slicing disk). Add brussels and berries to dressing and toss to coat. Season to taste.|
