Buttermilk Pancakes

8 cupsFlour
4 teaspoonsBaking powder
1/8 teaspoonSalt
4 largeEggs; Separated
1/2 teaspoonCream of Tartar
4 tablespoonsOil
2 cupsButtermilk


1Chill clean glass bowl in freezer. In a second bowl, whisk flour and baking powder.
2 In a third bowl, blend yolks, buttermilk, and oil.
3 In chilled bowl, beat egg whites until foamy. Add cream of tartar. Continue beating until stiff peaks form.
4 Mix lightly with fork: Flour mix and buttermilk mixture. Batter needs to be semi-lumpy. Fold in egg whites with spatula.
