A very light and fluffy pancake
Main Ingredient: Buttermilk

|4 teaspoons||Baking powder|
|4 large||Eggs; Separated|
|1/2 teaspoon||Cream of Tartar|
|1||Chill clean glass bowl in freezer. In a second bowl, whisk flour and baking powder.|
|2||In a third bowl, blend yolks, buttermilk, and oil.|
|3||In chilled bowl, beat egg whites until foamy. Add cream of tartar. Continue beating until stiff peaks form.|
|4||Mix lightly with fork: Flour mix and buttermilk mixture. Batter needs to be semi-lumpy. Fold in egg whites with spatula.|
