Caribbean Rice In A Rice Cooker

1 cupwhite rice; rinsed
1 teaspoonground jamaican jerk spice
1/4 cupcilantro
1sprig thyme; stem discarded
1garlic cloves; minced
1 teaspoongrated fresh ginger
2scallions, sliced
3/4 cupfinely diced sweet potatoes
1/3 cuptoasted coconut
1/3 cupdiced red peppers
1 cupvegetable broth; to cover rice


2 lime slices Directions
3 Put aside 1 tablespoon scallions and 1 teaspoon coconut for garnish.
4 Place all the rest ingredients in rice cooker. Pour broth 3/4 inch above the level of the rice.
5 Press the cook button.
6 When done fluff with fork place in a serving dish and top with reserved coconut and scallions place lime along side for garnish and use as wanted.
