Chunky Potato Soup with Dill

2 mediumCarrots; chopped in 1/2" pieces
2 medium ribsCelery; chopped in 1/2" pieces
1 mediumOnion; chopped
1 1/2 poundsPotatoes; peeled and chopped
3 cupWater
2 cupSoy milk
2 teaspoonDill weed
1 1/2 teaspoonSalt
1 dashPepper


1Cooks veggies in olive oil in large pot, covered over medium high heat, stirring ocaissionally until browned, 15 minutes. Add water, salt and pepper. Cover and simmer 10 minutes. put soy milk in blender, top with some soup and puree. Stir back into pot. Stir in dill and heat through.
