1Red bell pepper; sliced
1Sweet potatoe; chopped
1Carrot; ch'
3 tablespoonVegetable oil
4 ounceGreen Beans; chopped
1 can (14oz)Baked beans; gluten free
1 can (7oz)Corn
1 tablespoonTomato paste
Salt; to taste
4 ounceSmoked cheese
1 poundPotato; thinly sliced
2 tablespoonButter; melted
Pepper; to taste

Method

StepInstruction
1Fry onion, red pepper and sweet potatoe (and or carrots) in the oit until softened but not browned.
2 Add the green beans, baked beans, corn with liquid, tomatoe paste, salt stir and simmer for 5 minutes.
3 Transfer veggies to a shallow ovenproof casserole. Scatter cubed cheese on top. Cover with thinly sliced potatoes, brush with butter, season, bake at 376 degrees F for about 30-40 minutes, until potatoes are golden brown on top.
