Cranberry Chocolate Truffles

375 gramsDark chocolate melts
150 gramsButter
1/2 cupcraisons
1/4 cuporange juice or cointreau
3 cupsicing sugar
zest of 1 orange
750 gramsDark chocolate


1In a pot over low heat, melt the chocolate melts and butter until melted, stir occasionally & remove from the heat
2 Add the craisons, orange juice, icing sugar and zest. Fold to combine.
3 Place the mixture into the fridge until it's firm enough to roll into balls (about 1 hour).
4 Remove mixture from the fridge and stir to combine
5 Line oven trays with foil & roll the truffles into small balls & place on the tray
6 Freeze them for 2 hours
7 Melt the 750grams of dark chocolate
8 Place the chilled truffles into the melted chocolate with one hand and remove them with a fork in the other hand. Carefully place them on the oven tray.
9 Allow the truffles to rest in a cool place until set!
