Crock Pot Potato Soup

8Russet potatoes; cut into cubes
1Onion; diced
1 32 ounceChicken broth
1 cupWater; Only if necessary to completely submerge potatoes
3 clovesGarlic; minced
1/4 cupButter
3 tablespoonsKosher Salt
1 tablespoonBlack pepper
1/2 pintHalf-and-half cream
1 cupSour cream
2.5 cupssharp Cheddar cheese
3Green onions; chopped
8 slicesBacon; cooked & crumbled
1crescent roll tube


11) Place potatoes, onion, and garlic in the bottom of crock pot. Cover with chicken broth and water. Add butter, salt, and pepper. Let cook for 6 - 7 hours on low.
2 2) Before serving, mash potatoes slightly to thicken soup. Add half and half, 1 cup of cheddar, sour cream and green onions. Stir well to melt cheese.
3 3) Serve topped with bacon crumbles and remaining cheese.
4 Bake crescent rolls according to package. Serve with soup.
