A wonderful substitute for pasta sauce or an excellent dish on its own Perfect for a potluck
Main Ingredient: Eggplanteggplant
|1 1/2 cups||tomato; canned or fresh|
|1||Peel eggplant and dice into one inch cubes. Steam until tender.|
|2||Preheat oven to 350.|
|3||Chop onion and tomato.|
|4||Grease a 1 quart casserole dish.|
|5||Combine eggplant, egg, onion, salt and tomato in the casserole dish.|
|6||Top with butter cut into small chunks.|
|7||Cook, uncovered for 30 minutes.|
