Ingredients

1eggplant; medium
1egg; beaten
1onion; small
1 teaspoonsalt
1 1/2 cupstomato; canned or fresh
2 tablespoonbutter

Method

StepInstruction
1Peel eggplant and dice into one inch cubes. Steam until tender.
2 Preheat oven to 350.
3 Chop onion and tomato.
4 Grease a 1 quart casserole dish.
5 Combine eggplant, egg, onion, salt and tomato in the casserole dish.
6 Top with butter cut into small chunks.
7 Cook, uncovered for 30 minutes.
