|3-4 medium||Onions; Thinly Sliced|
|drizzle||Olive Oil; (to taste)|
|4 cups||Beef Broth; (Whole Box)|
|Salt & Pepper; (to taste)|
|Sliced or shredded||Cheese; (Provoline or Mozzorella)|
|1||1. In a large pot, cook onions and butter until soft|
|2||2. Drizzle with Olive Oil and cook for an additional 15 minutes|
|3||3. Add broth, water, salt & pepper. Cover and let cook for 30 minutes|
|4||4. Ladle soup into ramekins. Place croutons on top (optional, leave out if cooking for low carb).|
|5||5. Cover with cheese.|
|6||6. Bake in the oven at 400 degrees for 15 minutes or until cheese is melted and golden brown. Serve Immediately.|
