3 cupsQuick-cooking oats
1 cupBrown sugar; packed
2 teaspoonsBaking powder
1 teaspoonsalt
1/2 teaspoonCinnamon; ground
2Eggs; lightly beaten
1 cupSkim milk
1/2 cupButter; melted
3/4 cupApple; chopped, peeled, tart
1/3 cupPeaches; fresh or frozen
1/3 cupBlueberries; fresh or frozen
additionalSkim milk; OPTIONAL


2 •In a large bowl, combine the oats, brown sugar, baking powder, salt
3 and cinnamon. Combine the eggs, milk and butter; add to the dry
4 ingredients. Stir in the apple, peaches and blueberries.
5 •Pour into an 8-in. square baking dish coated with cooking spray.
6 Bake, uncovered, at 350° for 35-40 minutes or until a knife
7 inserted near the center comes out clean. Cut into squares. Serve
8 with milk if desired. Yield: 9 servings.
