2 cupsGF Brown Rice Flour Mix
1/2 teaspoonxanthan gum
1/2 cupConfectioners Sugar
1/2 teaspoonSalt
3/4 cupButter
2 tablespoonsAlmonds; finely ground, optional
1 1/3 cupSugar
3 tablespoonsGF Brown Rice Flour Mix
1/2 teaspoonBaking Powder
1/3 cupLemon juice
2 teaspoonsLemon zest
Confectioners Sugar; for dusting


1Preheat oven to 350F. Lightly grease a 9x13 pan.
2 In food processor, combine flour mix, xanthan gum, confectioner's sugar, salt, butter, and ground almonds (if using). Pulse on and off until resembles coarse meal. Spread into baking pan and pat down. Bake for 20 mins or until lightly colored.
3 Filling: While crust is baking, combine filling ingredients in food processor and process until well mixed. Pour over hot crust and bake for another 20 minutes. Cool slightly before dusting with powdered sugar. Cut into 2" x 1 1/4" bars.
