3 tblspOlive Oil, Divided
3 lbsBeef Brisket; Trimmed and Coated with Salt, Oregano and Black Pepper
1 cupLow-Sodium Beef Broth
1 largeOnion
1 cupPlain Yogurt
1 cupCrumbled Feta Cheese
1 cupChopped Cucumber
1Lemon (Minced Zest)
2 tblspFresh Lemon Juice
1 tblspMinced Fresh Oregano
4Chopped Scallions
6 6-inchFlatbread Rounds
2 cupsShredded Romaine Lettuce
1 cupSeeded, Diced Tomato


1Heat 2 tablespoons oil in a skillet over mediium-high heat. Add brisket; sear 5 minutes per side. Transfer meat to a 4 to 6 quart slow cooker. Deglaze skillet with broth, scraping up browned bits. Add broth and onion to slow cooker. Cover, cook on high-heat setting for 4-5 hours. Remove and onion to a plate; using two forks, shred meat.
2 Puree yogurt, feta, cucumber, scallions, zest, lemon jouce, oil, oregano, salt, and pepper in a food processor until smooth.
3 To serve, divide the meat and onion among flatbread rounds. Top each samdwich with romaine, tomato, and tzatziki.
