Harvest Apple Pie

GF Vinegar Pastry; (see recipe)
1/4 cupApricot marmalade; or jam
6 largeApples; Jonathan, Rome Beauty, or favorite pie apple
3 tablespoonsLemon juice
2/3 cupBrown sugar
1/4 cupGF Brown Rice Flour Mix
1 teaspoonCinnamon
1/3 teaspoonNutmeg
1 tablespoonButter
1 1/2 teaspoonsMilk
1 teaspoonSugar


1Preheat oven to 400F. Grease 9 inch pie pan.
2 Roll out half of the pastry and fit it into the pie pan. Brush with melted jam and refrigerate.
3 Peel, core and cut apples into 1/4" slices. Place in a bowl and toss with lemon juice.
4 Combine the brown sugar, GF flour, cinnamon and nutmeg. Layer 1/2 apples in chilled crust and sprinkle with 1/2 sugar mixture. Repeat layers. Cut butter into small pieces and scatter over apples.
5 Roll out top crust, place over filling, trim and flute edges. Make 3 steam vents in center.
6 Brush with milk and sprinkle with 1tsp sugar
7 Bake in middle of ovenfor 50-60 minutes. If crust edges brown to quickly, cover with strips of foil. Allow to coof for at least 10 minutes before serving.
