Irish Stew

Serves: 3
Oven temp: 325°F / 160°C / Gas Mark 3

2 tablespoonsOil; Peanut oil is good
2 tablespoonsFlour
700 gramsLamb; Lean diced neck or shoulder
2 wholeOnions; medium
200 gramsCarrots; (3 medium carrots), sliced
3 sticksCelery; sliced
500 mlLamb stock
800 gramsPotatoes; cut into rough 1
2 leavesBay
1 tablespoonThyme; fresh if possible
Good TwistSalt & pepper


1Coat the lamb in the flour and fry off in the oil until the outside is browned off, and then put into a casserole dish.
2Pour the lamb stock over the lamb.
3Fry off the onions, celery and carrots until the onions have gone translucent. Add to the casserole dish.
4Add the potatoes to the dish, the bay leaves, the thyme, and salt & pepper, cover and put in a pre-heated oven for two hours.
5Check periodically. The dish is cooked when the potatoes and meat are soft. You can remove the lid, and turn the oven up to 180 for 10 minutes if you wish to brown the potatoes.
