Kraut Salad

1 qtSauerkraut; rinsed and
1 c dicedcelery;
1 lg greenpepper; diced
1 mdOnion; diced
1 small jarPimento; diced
1 teaspoonSalt;
1 1/4 cupSugar;
1/2 cupWhite vinegar;
1/4 c Water


1Combine sauerkraut, celery, pepper, onion and pimento in bowl.
2 Mix salt, sugar, vinegar and water in saucepan.
3 Cook mixture over low heat, stirring until sugar is dissolved.
4 Cool.
5 Add 1/4 c. vegetable oil.
6 Mix into vegetables and refrigerate overnight.
