3/4 cupMayonnaise
2 splashesDry vermouth
1.5 tbsDijon mustard (seeded)
3 shakesTabasco sauce
5 shakesWorcestershire sauce
1/4 squeezedFresh lemon juice; (not too hard)
salt & pepper; to taste
1/4 teaspoonGarlic powder
1/4 teaspoonCayenne pepper
1 lbGrouper; or other dense white fish
3 tbsAll purpose flour
Salt & pepper; to taste (a pinch or so each)
1/2 teaspoonCayenne pepper
1/2 teaspoonGarlic powder


2 mayonaise
3 dry vermouth
4 seeded dijon mustard
5 Tabasco sauce
6 Worcestershire sauce
7 Lemon juice
8 salt & pepper
9 garlic powder
10 Cayenne pepper
11 whisk together in a big bowl. serve over pan fried white fish.
12 FISH:
13 6 oz/serving
14 dredge in flour seasoned with salt, pepper, Cayenne, garlic powder
15 sear top and bottom on the stove (approximately 2 minutes/side), finish in a 375 oven (3-4 minutes)
