Restaurant Style Mexican Rice

1 cupLong Grain Brown Rice; raw
3 tablespoonBacon grease; (or cooking oil)
1/2 cupOnion; chopped
1/2 cupCarrot; chopped
1 cloveGarlic; minced
1/2 cupTomato sauce
2 cupsChicken Broth
1 teaspoonSalt


1Heat bacon grease on medium heat. Add raw rice, cook until golden brown. Take caution not to burn the rice. Add in onions, carrots and garlic, saute until onions are tender. Add in tomato sauce, chicken broth and salt. Increase heat to high and bring to a boil. Lower heat to medium, cover and cook for approximately 45 minutes or until rice is tender.
