Shrimp Peppers and Cheese Grits

1/4 cupcanadian bacon; (Or bacon bits)
1 cupRed bell pepper; strips
1 cupgreen bell pepper; strips
1 can (10 oz.)Rotel tomatoes
1 1/2 poundslarge shrimp; peeled and deveined
1/2 cupchopped green onions
1 2/3 cupsfat-free milk
1 can (16 oz.)fat-free, less-sodium chicken broth
1 cupuncooked quick-cooking grits
1 cupreduced-fat sharp cheddar cheese; shredded


11. Cook bacon in a skillet over medium heat 3 minutes or until lightly browned, stirring frequently. Add bell peppers, cook 10 minutes, stirring occasionally. Add tomatoes, cook 5 minutes. Add shrimp, cook 3 minutes. Stir in green onions; keep warm.
2 2. Combine milk and broth in a saucepan. Bring to a boil, and stir in grits. Bring to a boil, reduce heat, and cook for 5 minutes or until thick, stirring occasionally. Stir in cheese.
3 3. Serve shrimp mixture over grits.
