Spicy ham & cheese melts with salsa

5 Eggs
1/4 teaspoonDried chilli flakes; optional
1/4 cupCoriander leaves; finely chopped
4 largeHam slices
8 slicesJarlsberg cheese
8 slicesWhite bread
40 gramsUnsalted butter
1 tablespoonsOlive oil
Tomato salsa or sweet chilli sauce


1Beat the eggs with 1/4 cup (60ml) water, the chilli flakes (if using) and the chopped coriander leaves. Season with salt and pepper to taste.
2Sandwich the ham and cheese between the slices of bread to make 4 sandwiches. Dip into the egg mixture and shake off any excess.
3Heat the butter and olive oil in a large frying pan over medium heat. Add 2 sandwiches to the pan and weigh down with a heavy-based pan. Cook for 1-2 minutes each side until the outside is crisp and golden and the cheese has melted. Remove and cook remaining 2 sandwiches.
4Halve sandwiches and serve with the tomato salsa on the side, or drizzle with sweet chilli sauce.
