Spend a cosy Friday night in with a good DVD and these tasty sandwiches. They're easy to make and perfect for eating couch-side.
Main Ingredient: Bread
|1/4 teaspoon||Dried chilli flakes; optional|
|1/4 cup||Coriander leaves; finely chopped|
|4 large||Ham slices|
|8 slices||Jarlsberg cheese|
|8 slices||White bread|
|40 grams||Unsalted butter|
|1 tablespoons||Olive oil|
|Tomato salsa or sweet chilli sauce|
|1||Beat the eggs with 1/4 cup (60ml) water, the chilli flakes (if using) and the chopped coriander leaves. Season with salt and pepper to taste.|
|2||Sandwich the ham and cheese between the slices of bread to make 4 sandwiches. Dip into the egg mixture and shake off any excess.|
|3||Heat the butter and olive oil in a large frying pan over medium heat. Add 2 sandwiches to the pan and weigh down with a heavy-based pan. Cook for 1-2 minutes each side until the outside is crisp and golden and the cheese has melted. Remove and cook remaining 2 sandwiches.|
|4||Halve sandwiches and serve with the tomato salsa on the side, or drizzle with sweet chilli sauce.|
