Sweet goes well with meat or chicken

|1 cup||pitted prunes; cut in half|
|1 cup||dried apricots; cut in half|
|2 cups||water; boiled|
|5 1/2 cups||Orange juice|
|1||Lemon, Juice of|
|1 can||pineapple chunks; drained|
|1/4 cup||dark brown sugar|
|1/4 cup||Vegetable oil|
|1||Cut prunes and apricots in half and put in boiled water for ten minutes.|
|2||Generously oil a heavy pan.|
|3||Peel sweet potatoes and cut into chunks and place in oiled pan along with sliced carrots. Drain the prunes and apricots (save water) and add to the pan. In a small bowl, mix the orange juice, lemon juice, pineapple juice, spices and dark brown sugar. Cover and bake at 350 degrees for 1 hour. Check often and add the drained liquid from the prunes/apricots if the liquid evaporates. Bake uncovered for 15 minutes.|
