Ultimate Sausage Rolls

100 gramsParmesan cheese; grated
1 Egg yolk; beaten
1 teaspoonCayenne pepper
1 squeezeTomato puree
4 slicesParmesan ham
375 gramsPuff pastry; ready made
4 Sausages; herby type is good
Sea salt
Spicy tomato dip
1 dollopTomato sauce
1 dashWorcestershire sauce
1 dashTabasco sauce
1 teaspoonHorseradish sauce


1Preheat the oven.
2Wrap each sausage in a slice of parma ham and set aside whilst you prepare the pastry.
3Unroll the pastry, squeeze a big dollop of tomatoe puree over it and use a spoon to spread it evenly over the pastry. Sprinkle over the parmesan and cayenne pepper and cut in 4 squares.
4Place one parma wrapped sausage on each square and roll them up, ensuring the joint is on the underside of the roll. Slash the top a few times with a small knife, brush with beaten egg yolk and sprinkle with salt.
5Bake in the oven for 20-30 minutes until golden brown.
