|1 ea||green pepper; sliced|
|1 ea||garlic clove; minced|
|3 tablespoon||olive oil|
|1 1/2 lb||zucchini; sliced|
|4 ounce||tomato sauce|
|1||Saute onion, green pepper, and garlic in oil in a frying pan until onion is golden brown. Add zucchini, cover and simmer over low heat until tender, about 15-20 minutes. Add tomato sauce, basil, oregano and salt and pepper to taste, and simmer 10 minutes longer to blend flavors. If you wish this to be a patio meal, bake it in a casserole in a 350F oven for 15 minutes after adding the tomato sauce.|
