|3 tablespoon||peanut oil|
|3 lb||zucchini; sliced|
|2/3 cup||onion; chopped|
|2 tablespoon||parsley; chopped|
|1 ea||garlic clove; minced|
|1/4 teaspoon||black pepper|
|1/4 teaspoon||rosemary leaves|
|4 cup||tomatoes; chopped, peeled|
|1/2 cup||parmesan cheese; grated|
|1||Heat oil in large skillet. Add zucchini, onion, parsley, garlic, salt, oregano, pepper and rosemary. Saute mixture over medium heat, stirring often, until zucchini is tender, about 20 minutes. Toss in tomatoes and continue to saute til tomatoes are thoroughly heated, about 5 minutes. Turn mixture into serving dish; sprinkle iwth cheese. Serves 8|
